I am trying to find a way to disable the esc key on the touch screen keyboard that way no one can esc out of the kiosk. I know you can put a password for esc'ing but i would prefer that the esc key was taken off. Any help would be greatly appreciated.

That is possible. As every touchscreen skin is changeable you only have to change the .xml file of your touchscreen, which can be found within the folder skins.
The virtual key ID for ESC is 27, so you have to search for the ESC definition which looks like:
<key sound="6" type="0" vkey="27">
<shape>
<rect x1="32" y1="47" x2="84" y2="97" />
</shape>
</key>
Change the type to e.g. to 12 so that the start page is loaded when someone hits the ESC Button:

<shape>
<rect x1="32" y1="47" x2="84" y2="97" />
</shape>
</key>
